Wild boar meatballs I used a hind leg - meat was 1.6 kg or 4 lbs I added 400gr or 1 lbs pork fat 4 eggs 125gr crushed pork rinds (1 bag) 2,25 dl or 1 cup heavy cream Seasoning 2 tbs basil 2 tbs garlic powder 1 tbs pink salt 1 tbs onion powder 1 tbs paprika 1 tbs black pepper 1 tsp cumin 1 tsp chili powder Smoked at 225 for 2 hours until internal 160f

Spatchcocked Chicken Spatchcocking can also be called butterflying. In short its a technique to flatten the chicken to make it easier to cook evenly. This is done by removing the backbone and nickinf the breast cartilage. Here i then season with Stubbs Chicken Seasoning after applying a bit of garlic infused oil. I cook in the oven at 175/350 until internal 65/170 in the breast and thighs.

Using the wga to smoke some lambshanks. Smoked them for 90 minutes at 275-300F until internal 160F

Naking spareribs today. Cooked them unwrapoed three hours , at 250-275F. Seasoned with Midnight Espresso from www.tangospice.com - and a bit of cayenne. Wrapped after adding butter and maple syrup. On the grill another hour for a total of four.

Wanted to try out getting the temp up in the flowerpot so decided to grill some premarinated chicken. Turned out great but i realized i need to add another vent to allow for more airflow. More to come :)

Made some improvmements to the Flowerpot Kamado - and used it to make some lollipop chicken drumsticks. Simple really. Cut around the bone. Push down the meat. Season. Grill until 165 atleast. Glaze with butter/seasoning/jam or what you like. Serve with a sallad

    I wonder if soaking it with a potato in water would help bring out more salt. My last batch was too salty. Going to soak it next time as I do not want sugar in my bacon

    Kernels that are left on the shelf for a long period of time will dry out inside. Those kernels need to be rehydrated. Soaking them will make a big difference. Your experiment was on kernels that were not old (I assume), so both batches had sufficient moisture inside. That would explain why the result was the same.

    Great job, well done 👌👊🙂👍 You can possibly also add a lip to the perimeter of either the top lid or bottom dome to prevent the lid from sliding off like a small bracket.

    I use this pot but the bigger size for Tandoori oven. It has developed some cracks. Can we use Fireplace Mortar to fix the cracks? Also, I would love to have a layer of mortar applied inside the pot to prevent future cracks. Is it safe/advisable to use fireplace mortar inside pot? Worried about any chemical smoke since we frequently use for grilling

      You put a smaller pot inside the base one and fill the gap inbetween with sand to insulate base pot from heat

    The dark washers all go on the outside like you have them for the legs. At 2:27 you put the dark washer on the inside. I hope that hasn't caused any problems.
